This peppery soup is similar in texture to potage, soup with a base of potato. But as it uses quinoa instead of potato it is much healthier, not as heavy but just as filling.


  • 3 small red onions, finely sliced
  • 1/2c red wine
  • 1/2c balsamic vinegar
  • 1c water
  • 3c boiling water
  • 1t stock powder
  • 1 garlic clove, minced 80g watercress
  • 1/4t ground white pepper
  • 1c white quinoa
